Ingredients

  • 2 slices of your favorite bread (sourdough, whole grain, or classic white)
  • 12 tablespoons of pesto (homemade or store-bought)
  • 2 slices of cheese (mozzarella, cheddar, or your favorite melting cheese)
  • Butter or olive oil (for grilling)

Instructions

  1. Spread 1-2 tablespoons of pesto on one side of each slice of bread.
  2. Place a slice of cheese on the unpasted side of one of the bread slices. Top it with the other bread slice, ensuring the pesto side is facing up.
  3. Heat a skillet over medium heat and add a pat of butter or a drizzle of olive oil. Once sizzling, place the sandwich in the skillet. Cook until the bread is golden brown and crispy, about 3-4 minutes on one side. Flip and grill the other side until the cheese is melted and bubbly.
  4. Remove from skillet, slice, and serve warm.

Notes

For extra melty cheese, cover the skillet with a lid while grilling. Customize with veggies or different cheeses for added flavor.
