- 2 slices of your favorite bread (sourdough, whole grain, or classic white)
- 1–2 tablespoons of pesto (homemade or store-bought)
- 2 slices of cheese (mozzarella, cheddar, or your favorite melting cheese)
- Butter or olive oil (for grilling)
Instructions
- Spread 1-2 tablespoons of pesto on one side of each slice of bread.
- Place a slice of cheese on the unpasted side of one of the bread slices. Top it with the other bread slice, ensuring the pesto side is facing up.
- Heat a skillet over medium heat and add a pat of butter or a drizzle of olive oil. Once sizzling, place the sandwich in the skillet. Cook until the bread is golden brown and crispy, about 3-4 minutes on one side. Flip and grill the other side until the cheese is melted and bubbly.
- Remove from skillet, slice, and serve warm.
Notes
For extra melty cheese, cover the skillet with a lid while grilling. Customize with veggies or different cheeses for added flavor.
