- 1 pound chicken breast, diced
- 1 cup pineapple chunks (fresh or canned)
- 1 cup rice (white or brown)
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1 onion, diced
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 3-4 minutes.
- Add the diced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Stir in the pineapple chunks, soy sauce, and rice, then pour in the chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
- Check that the rice is cooked and has absorbed the broth. Season with salt and pepper to taste, and garnish with chopped green onions if desired.
Notes
Feel free to customize with different proteins or veggies. Brown rice may require additional cooking time.
