- 2 cups water
- 1 tablespoon garlic, minced

- 2 cups mixed greens (like spinach or bok choy)
- 2 green onions, chopped
- Soy sauce, to taste
- Sesame oil (optional)
Instructions
- In a large pot, combine the chicken or vegetable broth and water. Bring to a hearty boil over medium-high heat.
- Add the minced garlic and ginger, reduce heat, and let it simmer for about 5 minutes.
- Gently add the potstickers to the broth and cook for about 5-7 minutes until tender.
- Fold in the mixed greens and let them wilt for 2-3 minutes.
- Finish off with a splash of soy sauce and a drizzle of sesame oil, if using. Stir gently.
- Ladle the soup into bowls, garnishing with chopped green onions.
Notes
For a gluten-free version, use tamari instead of soy sauce. Store leftovers in an airtight container for up to 3 days.
