Ingredients

  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups mixed greens (like spinach or bok choy)
  • 2 green onions, chopped
  • Soy sauce, to taste
  • Sesame oil (optional)

Instructions

  1. In a large pot, combine the chicken or vegetable broth and water. Bring to a hearty boil over medium-high heat.
  2. Add the minced garlic and ginger, reduce heat, and let it simmer for about 5 minutes.
  3. Gently add the potstickers to the broth and cook for about 5-7 minutes until tender.
  4. Fold in the mixed greens and let them wilt for 2-3 minutes.
  5. Finish off with a splash of soy sauce and a drizzle of sesame oil, if using. Stir gently.
  6. Ladle the soup into bowls, garnishing with chopped green onions.

Notes

For a gluten-free version, use tamari instead of soy sauce. Store leftovers in an airtight container for up to 3 days.
