- 1 cup blueberries
- 2 cups rolled oats
- 1/2 cup milk
- 3 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C). In a large mixing bowl, whisk together the cottage cheese, milk, and eggs until smooth and well combined.
- Add the rolled oats, honey (or maple syrup), vanilla extract, baking powder, salt, and cinnamon (if using). Stir until the oats are fully coated.
- Fold in the blueberries gently, then pour everything into a greased baking dish and spread evenly. Bake for 30-35 minutes until set in the center and lightly golden on top.
- Cool for a few minutes before slicing and serving.
