  • 2 large eggs
  • 1 (15-ounce) can pumpkin puree
  • ½ cup chopped walnuts or pecans (optional)
  • 8 tablespoons (1 stick) unsalted butter, softened
  • 4 ounces cream cheese, softened
  • 3 cups powdered sugar
  • ½ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 24 tablespoons milk or cream (to adjust consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, whisk together sugar, vegetable oil, and eggs until smooth, then stir in the pumpkin puree.
  4. Gradually add the dry mixture to the wet mixture until just combined. Fold in nuts if using.
  5. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Let bars cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
  7. For the frosting, beat butter and cream cheese until smooth, then mix in powdered sugar and brown sugar. Add vanilla and milk until desired consistency is reached.
  8. Spread frosting over the cooled bars and enjoy!
