Pumpkin Cheesecake Truffles are creamy, spiced, no-bake treats made with pumpkin, cream cheese, and graham cracker crumbs, coated in smooth white chocolate. Perfect for fall parties, cozy gatherings, or sweet indulgences at home!
Ingredients
8 oz cream cheese, softened
1 cup pumpkin puree
1 cup powdered sugar
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1 cup graham cracker crumbs
12 oz white chocolate, melted
Instructions
1. In a mixing bowl, combine cream cheese, pumpkin puree, powdered sugar, vanilla extract, cinnamon, nutmeg, and ginger. Mix until smooth.
2. Chill the mixture in the refrigerator for 30 minutes to firm up.
3. Scoop small portions and roll into balls.
4. Roll truffles in graham cracker crumbs to coat evenly.
5. Dip each truffle in melted white chocolate, letting excess drip off. Place on a parchment-lined baking sheet.
6. Refrigerate until chocolate is set.
7. Serve and enjoy!
Notes
Best served chilled, paired with apple cider or hot chocolate.
Store in an airtight container in the fridge for 3-5 days, or freeze up to 1 month with parchment layers.
