- 1/2 cup pumpkin puree

- 1/2 cup brown sugar (for topping)
- 1/4 cup chopped pecans
- 1 1/2 cups very hot water
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking powder, salt, sugar, and spices.
- Combine the pumpkin puree, milk, melted butter (or oil), and vanilla extract in a separate bowl. Mix until well blended. Pour into the dry ingredients and mix until just combined.
- Pour the batter into an 8-inch casserole dish. In another bowl, mix together the granulated sugar, brown sugar, and chopped pecans for the topping. Sprinkle this mixture evenly over the batter.
- Carefully pour the very hot water over the entire dish, then place on a baking sheet. Bake for about 40 minutes or until the middle is set.
- Cool for 5-10 minutes before serving.
Notes
For a dairy-free version, swap the milk for your favorite plant-based alternative. Use sunflower seeds instead of pecans for a nut-free option.
