  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking powder, salt, sugar, and spices.
  2. Combine the pumpkin puree, milk, melted butter (or oil), and vanilla extract in a separate bowl. Mix until well blended. Pour into the dry ingredients and mix until just combined.
  3. Pour the batter into an 8-inch casserole dish. In another bowl, mix together the granulated sugar, brown sugar, and chopped pecans for the topping. Sprinkle this mixture evenly over the batter.
  4. Carefully pour the very hot water over the entire dish, then place on a baking sheet. Bake for about 40 minutes or until the middle is set.
  5. Cool for 5-10 minutes before serving.

Notes

For a dairy-free version, swap the milk for your favorite plant-based alternative. Use sunflower seeds instead of pecans for a nut-free option.
