Ingredients
1 cup almond flour
1 3/4 cups powdered sugar
3 large egg whites
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/4 cup pumpkin puree
1/2 cup cream cheese
1/2 cup powdered sugar (for filling)
1 teaspoon vanilla extract (for filling)
Instructions
1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. Sift almond flour and powdered sugar together.
3. Whip egg whites until foamy, then gradually add granulated sugar and beat to stiff peaks.
4. Fold in the dry ingredients with vanilla extract, pumpkin pie spice, and salt.
5. Transfer batter to a piping bag and pipe small circles onto baking sheet.
6. Let macarons sit 30 minutes until a skin forms.
7. Bake 15-20 minutes, then cool completely.
8. Mix cream cheese, powdered sugar, vanilla extract, and pumpkin puree for filling.
9. Pipe filling onto half the macarons and sandwich with the others.
10. Refrigerate at least 30 minutes before serving.
