Ingredients

  • 1 1/4 teaspoon instant yeast
  • 1 large egg (room temperature)
  • 40 g butter (room temperature)
  • 1/2 teaspoon salt
  • 1/4 cup (1/2 dl) granulated sugar
  • 2 1/2 cups (5 dl) all-purpose flour
  • 90 g butter (room temperature) for filling
  • 1/2 cup (1 dl) brown sugar for filling
  • 1 1/2 tablespoons ground cinnamon for filling
  • 1 tablespoon vanilla sugar or 1 tablespoon vanilla extract for filling
  • 170 g cream cheese for frosting
  • 75 g butter (room temperature) for frosting
  • 1 3/4 cups (3.5 dl) powdered sugar for frosting
  • 1 tablespoon vanilla extract for frosting
  • 40 pieces of thick thread (1520 cm long) for shaping

Instructions

  1. In a mixing bowl, combine warm milk, yeast, and sugar. Let it sit for 10 minutes until frothy.
  2. Add the egg, salt, and half of the flour. Gradually mix in the butter and the remaining flour. Knead until smooth. Optionally, add orange food coloring for a pumpkin hue. Cover the bowl and let the dough rise for 1.5 hours in a warm place.
  3. In another bowl, mix the filling ingredients: butter, brown sugar, cinnamon, and vanilla until well combined.
  4. Roll out the dough into a large rectangle. Evenly spread the filling mixture over the surface. Roll the dough tightly into a log and slice it into 10 rolls. Place the rolls on pieces of thread, tying them loosely to shape like pumpkins.
  5. Let the formed rolls rest for 30 minutes while preheating your oven to 350°F (180°C). Brush the tops with an egg wash for golden color. Bake for 30-40 minutes until golden and cooked through.
  6. In a mixing bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla, mixing until creamy. Frost the rolls generously once they have cooled.

Notes

Serve warm with coffee or tea. Store in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week or freeze for up to a month.
