Description

Cozy enchiladas with tender tortillas, creamy cheese, and hearty black beans, perfect for family gatherings.


Ingredients

  • 5 tortillas (corn or flour)
  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup enchilada sauce
  • 1/2 cup diced onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the rinsed black beans, half of the shredded cheese, and the diced onions.
  3. Spread a thin layer of enchilada sauce on the bottom of your baking dish. Fill each tortilla with the bean mixture, roll it up tightly, and place it seam-side down in the dish. Repeat with all tortillas.
  4. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheese on top.
  5. Bake for 20-25 minutes until heated through and cheese is golden and bubbly. Let it sit for a few minutes before serving.
