- 5 tortillas (corn or flour)
- 1 can black beans, rinsed and drained
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup enchilada sauce
- 1/2 cup diced onions
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the rinsed black beans, half of the shredded cheese, and the diced onions.
- Spread a thin layer of enchilada sauce on the bottom of your baking dish. Fill each tortilla with the bean mixture, roll it up tightly, and place it seam-side down in the dish. Repeat with all tortillas.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheese on top.
- Bake for 20-25 minutes until heated through and cheese is golden and bubbly. Let it sit for a few minutes before serving.
Notes
Letting the enchiladas rest after baking helps the flavors meld together.
