- 1 pint (300g) cherry or grape tomatoes, halved
- 1 1/2 cups (200g) fresh mozzarella, diced or torn

- 2 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil
- 1 small garlic clove (optional), minced
- Salt and black pepper, to taste
Instructions
- Cook pasta in salted boiling water until al dente (8-10 mins). Drain, rinse under cold water, and set aside.
- In a large bowl, combine cooled pasta, tomatoes, mozzarella, and basil.
- In a small bowl, whisk balsamic vinegar, olive oil, garlic (if using), salt, and pepper. Pour over salad and toss gently.
- Refrigerate for at least 15 minutes before serving to meld flavors, or store for meal prep.
