- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon red food coloring
- Powdered sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, mix the granulated sugar, brown sugar, and vegetable oil until well blended. Add in the eggs, vanilla extract, and red food coloring, mixing until smooth.
- Gradually incorporate the dry ingredients into the wet, stirring until just combined. Chill the dough in the refrigerator for 30 minutes.
- Scoop tablespoons of dough, roll into balls, and coat in powdered sugar. Place on the prepared baking sheet, spaced 2 inches apart.
- Bake for 10-12 minutes until edges are set and tops are crinkled. Cool on the sheet for a few minutes before transferring to a wire rack.
Notes
For a healthier option, substitute half of the all-purpose flour with whole wheat flour. Use beet juice as a natural coloring alternative if needed.
