Instructions

  1. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until combined.
  2. In another bowl, combine the egg, buttermilk, melted butter, red food coloring, and vanilla extract. Whisk until smooth and slightly frothy.
  3. Pour the wet ingredients into the bowl of dry ingredients and gently stir with a spatula until just combined.
  4. Heat a skillet over medium heat and grease lightly. Pour about 1/4 cup of batter onto the skillet, cook until bubbles form, then flip and cook until golden brown on both sides.
  5. Serve warm with cream cheese glaze or maple syrup.

Notes

To make buttermilk, mix milk with a touch of vinegar or lemon juice. For a lighter option, swap cream cheese glaze for maple syrup or yogurt.
