Instructions
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until combined.
- In another bowl, combine the egg, buttermilk, melted butter, red food coloring, and vanilla extract. Whisk until smooth and slightly frothy.
- Pour the wet ingredients into the bowl of dry ingredients and gently stir with a spatula until just combined.
- Heat a skillet over medium heat and grease lightly. Pour about 1/4 cup of batter onto the skillet, cook until bubbles form, then flip and cook until golden brown on both sides.
- Serve warm with cream cheese glaze or maple syrup.
Notes
To make buttermilk, mix milk with a touch of vinegar or lemon juice. For a lighter option, swap cream cheese glaze for maple syrup or yogurt.
