Ingredients
6 cloves garlic, roasted
4 large potatoes, peeled and diced
1 medium onion, chopped
4 cups vegetable or chicken broth
1 cup heavy cream

Instructions
1. Preheat oven to 400°F (200°C). Drizzle olive oil over garlic cloves, wrap in foil, and roast for 30 minutes until soft.
2. In a large pot, heat olive oil and sauté onion until translucent.
3. Add diced potatoes and cook for a few minutes.
4. Pour in broth, bring to boil, then simmer until potatoes are tender (15–20 minutes).
5. Squeeze roasted garlic from skins and add to pot.
6. Puree with immersion blender (or transfer to blender in batches).
7. Stir in cream, season with salt and pepper, and heat through.
8. Serve hot, garnished with chives.
