Ingredients

- 1 lb beef sausage (or chicken strips)
- 1 package (30 oz) frozen hash browns
- 2 cups shredded cheddar cheese
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 12 large eggs
- 1 cup milk (or non-dairy milk)
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Cook sausage in a skillet over medium heat until browned (5-7 minutes), then drain excess fat.
- In a large bowl, mix cooked sausage, frozen hash browns, 1 1/2 cups cheddar cheese, onion, and bell pepper.
- In another bowl, whisk eggs, milk, salt, and pepper. Pour over the sausage mixture and stir to coat.
- Transfer to a greased casserole dish, top with remaining cheese, and bake for 45-60 minutes until set and golden brown. Allow to cool slightly before slicing.
Notes
For a vegetarian option, omit meat and add extra veggies. You can also use diced potatoes or leftover roasted potatoes if you don’t have hash browns.
