- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- Green food coloring
- Powdered sugar (for decoration)
- Royal icing (for decoration)
Instructions
- Preheat oven to 350°F (175°C). In a large mixing bowl, whisk together flour, baking powder, and salt.
- Cream together butter and granulated sugar until light and fluffy (3-4 minutes).
- Beat in egg and vanilla extract, then add green food coloring to desired shade.
- Gradually add flour mixture into the butter mixture until combined.
- Roll out dough to 1/4 inch thickness and cut out shapes using shamrock cookie cutters.
- Transfer cookies to a baking sheet lined with parchment paper and bake for 8-10 minutes until edges are lightly golden.
- Allow cookies to cool completely before decorating.
Notes
Feel free to chill the dough for easier handling. Rotate baking sheets midway for even cooking.
