Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • Green food coloring
  • Powdered sugar (for decoration)
  • Royal icing (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). In a large mixing bowl, whisk together flour, baking powder, and salt.
  2. Cream together butter and granulated sugar until light and fluffy (3-4 minutes).
  3. Beat in egg and vanilla extract, then add green food coloring to desired shade.
  4. Gradually add flour mixture into the butter mixture until combined.
  5. Roll out dough to 1/4 inch thickness and cut out shapes using shamrock cookie cutters.
  6. Transfer cookies to a baking sheet lined with parchment paper and bake for 8-10 minutes until edges are lightly golden.
  7. Allow cookies to cool completely before decorating.

Notes

Feel free to chill the dough for easier handling. Rotate baking sheets midway for even cooking.
