- 12 graham crackers
- 2 tablespoons brown sugar
- ½ cup butter, melted
- 2½ cups cold milk
- ¼ teaspoon green food coloring
- 2 teaspoons mint extract
- 5.1 ounces box of instant vanilla pudding mix
- 8 ounces container of whipped topping, thawed
Instructions
- Preheat your oven to 350°F (175°C). In a food processor, crush the graham crackers into fine crumbs. In a mixing bowl, combine the crumbs with the brown sugar, then mix in the melted butter until well combined.
- Press the crumb mixture into a pie dish and bake for about 10 minutes until golden. Allow it to cool completely.
- In a large bowl, whisk together the cold milk, instant vanilla pudding mix, mint extract, and green food coloring until thickened (about 2 minutes). Fold in the whipped topping until smooth.
- Pour the filling into the cooled crust, spread evenly, and refrigerate for at least 4 hours or overnight.
Notes
For a dairy-free version, substitute coconut oil for butter and non-dairy milk for cold milk.
