Ingredients
4 bell peppers (orange or yellow for Halloween aesthetics)
2 cups shredded cooked chicken
1 cup cooked rice
1 cup black beans (drained and rinsed)
1 cup corn (frozen or canned)
1 cup diced tomatoes
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
1 cup shredded cheese (cheddar or Mexican blend)
Fresh cilantro for garnish
Instructions
1. Preheat oven to 375°F (190°C).
2. Cut tops off bell peppers and remove seeds.
3. In a bowl, mix shredded chicken, cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
4. Stuff mixture into prepared peppers.
5. Place stuffed peppers in baking dish and sprinkle cheese on top.
6. Cover with foil and bake 25 minutes.
7. Remove foil and bake 10 minutes until cheese is bubbly.
8. Garnish with fresh cilantro before serving.
Notes
