Description
A cozy and comforting shrimp casserole with a creamy base topped with crunchy panko breadcrumbs.
Ingredients
Scale
- 2 pounds large shrimp (21–24 count), peeled and deveined
- 1 tablespoon Old Bay seasoning
- 1 tablespoon salt (for cooking water)
- 2/3 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1 tablespoon butter, plus more for greasing the pan
- 1/2 cup panko bread crumbs
- 4 ounces shredded mozzarella cheese
- 4 ounces shredded medium cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C). In a large pot, fill with water, adding a tablespoon of salt and Old Bay seasoning, and bring to a boil. Add the shrimp and cook until opaque, about 30 seconds. Drain and transfer to a mixing bowl.
- In the bowl, combine the shrimp with mayonnaise, garlic powder, and black pepper. Stir gently, then fold in mozzarella and cheddar until well mixed. Transfer the mixture to a greased casserole dish.
- In a skillet, melt butter and stir in panko until coated. Sprinkle over the casserole. Bake uncovered for 13-15 minutes until the center reaches 145°F. Broil for an additional 1-2 minutes until golden brown. Let rest for 15 minutes before serving.
Notes
Don’t overcook the shrimp; they will continue cooking in the oven. This dish can be made ahead and refrigerated before baking.
