Description

A cozy and comforting shrimp casserole with a creamy base topped with crunchy panko breadcrumbs.


Ingredients

  • 2 pounds large shrimp (2124 count), peeled and deveined
  • 1 tablespoon Old Bay seasoning
  • 1 tablespoon salt (for cooking water)
  • 2/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon butter, plus more for greasing the pan
  • 1/2 cup panko bread crumbs
  • 4 ounces shredded mozzarella cheese
  • 4 ounces shredded medium cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C). In a large pot, fill with water, adding a tablespoon of salt and Old Bay seasoning, and bring to a boil. Add the shrimp and cook until opaque, about 30 seconds. Drain and transfer to a mixing bowl.
  2. In the bowl, combine the shrimp with mayonnaise, garlic powder, and black pepper. Stir gently, then fold in mozzarella and cheddar until well mixed. Transfer the mixture to a greased casserole dish.
  3. In a skillet, melt butter and stir in panko until coated. Sprinkle over the casserole. Bake uncovered for 13-15 minutes until the center reaches 145°F. Broil for an additional 1-2 minutes until golden brown. Let rest for 15 minutes before serving.

Notes

Don’t overcook the shrimp; they will continue cooking in the oven. This dish can be made ahead and refrigerated before baking.
