Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and black pepper, to taste
  • 1/4 cup sparkling water or broth (for deglazing)
  • 1/4 cup fresh parsley, chopped
  • Cooked linguine or spaghetti
  • Lemon wedges, for garnish

Instructions

  1. In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Drain and reserve about 1/2 cup of the pasta cooking water.
  2. In a large skillet, heat the butter and olive oil over medium heat. Add the garlic and red pepper flakes and sauté for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet in a single layer, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque.
  4. Add the lemon zest, lemon juice, and sparkling water or reserved pasta water to deglaze, scraping up any bits from the pan. Stir in the parsley and simmer for another minute.
  5. Toss the cooked pasta into the skillet with the shrimp and sauce, adding more pasta water if necessary. Serve with lemon wedges and garnish with parsley.
