- 2 lbs chicken thighs, bone-in, skin-on (or boneless, skinless)
- 2 tablespoons olive oil
- 1 cup onion, diced
- 3 cloves garlic, minced
- 4 cups mixed vegetables (bell peppers, broccoli, carrots)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 1 cup chicken broth (or vegetable broth for a vegetarian version)
- Fresh parsley, for garnish
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, thyme, and rosemary. Sear skin-side down for 5-7 minutes, then flip and cook for another 5 minutes. Remove and set aside.
- Lower the heat and sauté onions and garlic in the same skillet for 2-3 minutes until soft. Add mixed vegetables and sauté for 5 minutes.
- Return chicken to the skillet, pour broth over it, cover, and simmer for 20-25 minutes until chicken is cooked through.
Notes
Leftovers can be stored in the fridge for up to 3 days. For meal prep, this dish holds up well and can be made in larger batches.
