Description

A heartwarming chicken skillet dinner with tender chicken, vibrant vegetables, and savory herbs, perfect for weeknight meals or gatherings.

Ingredients

Scale
  • 2 lbs chicken thighs, bone-in, skin-on (or boneless, skinless)
  • 2 tablespoons olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1 cup chicken broth (or vegetable broth for a vegetarian version)
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, thyme, and rosemary. Sear skin-side down for 5-7 minutes, then flip and cook for another 5 minutes. Remove and set aside.
  2. Lower the heat and sauté onions and garlic in the same skillet for 2-3 minutes until soft. Add mixed vegetables and sauté for 5 minutes.
  3. Return chicken to the skillet, pour broth over it, cover, and simmer for 20-25 minutes until chicken is cooked through.

Notes

Leftovers can be stored in the fridge for up to 3 days. For meal prep, this dish holds up well and can be made in larger batches.
