- 1 pound ground beef
- 4 medium potatoes, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- In a skillet over medium heat, cook the ground beef with the chopped onion and minced garlic until the meat is browned and the onion is translucent, about 5-7 minutes. Stir occasionally to break up the meat. Once cooked, drain any excess fat and set the mixture aside.
- In your slow cooker, layer the diced potatoes on the bottom. Add the drained kidney beans and pinto beans for a hearty protein boost. Spoon over the cooked beef mixture, spreading it evenly over the beans. Finally, add the can of diced tomatoes with green chilies on top. Sprinkle with chili powder, cumin, salt, and pepper, and give it a gentle stir to combine.
- Cover your slow cooker and set it to cook on low for 6-8 hours or on high for 3-5 hours. You’ll know it’s ready when the potatoes are tender and the flavors have melded beautifully together. Just before serving, sprinkle the shredded cheddar cheese on top, cover to let it melt, and prepare for the cheers at the dinner table.
Notes
Feel free to swap ground beef for ground turkey or chicken for a lighter option. You can also make it vegetarian by using lentils instead of meat.
