Ingredients
1 lb boneless, skinless chicken breast
1 can black beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes
1 medium onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 tsp cumin
1 tsp chili powder
Salt to taste
Black pepper to taste
1 cup heavy cream
Optional toppings: green onions, cilantro, sour cream, tortilla strips
Instructions
1. Add the chicken, black beans, corn, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper to the slow cooker
2. Stir everything together until well combined
3. Cover and cook on low for 6-8 hours or on high for 4-5 hours
4. About 30 minutes before serving, remove the chicken and shred it using two forks
5. Return the shredded chicken to the slow cooker
6. Stir in the heavy cream and cook for an additional 5-10 minutes until warmed through
7. Serve hot with your favorite toppings
Notes
For extra heat, add diced jalapenos or a dash of hot sauce
Half-and-half can be used instead of heavy cream for a lighter option
Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months
