Ingredients
3–4 lb beef pot roast
2 large onions, sliced
3 cups beef broth
1 cup French onion soup
4 cloves garlic, minced
2 tablespoons Worcestershire sauce
2 teaspoons thyme
Salt and pepper to taste
2 tablespoons olive oil
Instructions
1. Heat olive oil in a skillet over medium-high heat. Season the pot roast with salt and pepper, then sear on all sides until browned (about 4-5 minutes per side).
2. Place sliced onions in the bottom of the slow cooker.
3. Add beef broth, French onion soup, minced garlic, Worcestershire sauce, and thyme. Stir to combine.
4. Place the seared pot roast on top of the onion mixture.
5. Cover and cook on low for 8 hours, until the beef is fork-tender.
6. Serve the pot roast warm with the onions and savory gravy spooned over your favorite sides.
