Ingredients
3 to 4 pounds beef chuck roast
2 tablespoons olive oil
Salt and pepper to taste
1 onion, chopped
4 carrots, cut into chunks
3 potatoes, cut into chunks
2 cups beef broth
2 tablespoons Worcestershire sauce
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf (optional)
Instructions
1. Season the beef chuck roast with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned.
3. Transfer the seared roast to the slow cooker.
4. Add the onion, carrots, and potatoes around the roast.
5. In a bowl, mix beef broth, Worcestershire sauce, garlic, thyme, and rosemary. Pour over the roast.
6. Add bay leaf if using.
7. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender.
8. Remove roast and vegetables, slice, and serve with cooking liquid as gravy.
Notes
Serve with mashed potatoes, bread, or a fresh salad.
For thicker gravy, add cornstarch slurry 30 minutes before serving.
Swap in sweet potatoes or parsnips for variety.
