- 6 boneless chicken thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp olive oil
- 4 cups thinly sliced potatoes
- 1 small onion, thinly sliced
- 2 cups shredded cheddar cheese, divided
- 2 tbsp all-purpose flour
- 2 cups milk
- 1/2 cup chicken broth
- 1 tsp dried thyme
- 1/2 tsp paprika
- 2 tbsp butter
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Season the chicken with salt, black pepper, garlic powder, and onion powder.
- Heat olive oil in a skillet and brown the chicken thighs for 3-4 minutes on each side. Remove and set aside.
- Melt butter in the same skillet, add onions and cook until soft. Stir in flour and cook for 2 minutes.
- Whisk in milk and chicken broth, cooking until thickened. Stir in thyme, paprika, and 1 cup cheddar cheese until melted.
- Grease a baking dish. Layer half of the sliced potatoes, pour half of the cheese sauce, add the browned chicken, then add the remaining potatoes and cheese sauce. Top with remaining cheese.
- Cover with foil and bake for 45 minutes. Remove foil and bake for another 15 minutes until bubbly. Let rest for 10 minutes before serving.
Notes
Feel free to substitute chicken with pork or adjust cheese types to your preference. Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
