Description
These soft-baked apple cinnamon rolls are a warm and comforting treat, bursting with flavors of tender apples and aromatic cinnamon, topped with a sweet cream cheese glaze.

- 250g whole milk, lukewarm
- 50g granulated sugar
- 2 1/4 tsp active dried yeast
- 2 large eggs, at room temperature
- 1/2 tsp kosher salt
- 565g all-purpose flour
- 100g unsalted butter, at room temperature
- 850g diced apples (about four medium apples), peeled and cored
- 30g unsalted butter
- 80g granulated sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1 Tbsp corn starch
- 125g pecan halves, chopped (optional)
- 190g unsalted butter, at room temperature (for filling)
- 280g brown sugar
- 2 Tbsp plus 1 tsp ground cinnamon
- 1/8 tsp kosher salt (for filling)
- 115g unsalted butter, at room temperature (for glaze)
- 225g cream cheese, at room temperature
- 250g powdered sugar, sifted
- 1–2 Tbsp heavy whipping cream
- 1/2 tsp kosher salt (for glaze)
Instructions
- Warm the milk in a small saucepan until lukewarm.
- Combine warmed milk, 50g granulated sugar, and active dried yeast in a mixing bowl and let sit until frothy (5-10 minutes).
- Add eggs and kosher salt to the yeast mixture, then mix in flour until a soft dough forms.
- Knead dough on a floured surface for 8-10 minutes, adding flour if too sticky.
- Incorporate butter by pressing out dough, spreading butter on top, folding, and kneading for another 5 minutes.
- Let the dough rise in a greased bowl, covered, for about 1 hour until doubled in size.
- In a skillet, melt 30g butter, add diced apples, 80g sugar, 1/2 tsp cinnamon, and corn starch; cook for 5-7 minutes until tender.
- Punch down the risen dough and roll it out into a large rectangle.
- Spread the 190g butter over the dough, then sprinkle with brown sugar and cinnamon mixture, and add apple filling.
- Roll the dough into a log and slice into rolls.
- Let rolls rise in a greased baking dish for 30-45 minutes while preheating the oven to 180°C (350°F).
- Bake for 25-30 minutes until golden brown.
- Prepare the cream cheese glaze by beating cream cheese, butter, powdered sugar, and heavy cream until smooth.
- Drizzle the glaze over the warm rolls and serve.
Notes
For a dairy-free option, use almond milk or oat milk. Coconut sugar can substitute for granulated or brown sugar. Enjoy with coffee or tea.
