Description

These soft-baked apple cinnamon rolls are a warm and comforting treat, bursting with flavors of tender apples and aromatic cinnamon, topped with a sweet cream cheese glaze.

  • 50g granulated sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g all-purpose flour
  • 100g unsalted butter, at room temperature
  • 850g diced apples (about four medium apples), peeled and cored
  • 30g unsalted butter
  • 80g granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 Tbsp corn starch
  • 125g pecan halves, chopped (optional)
  • 190g unsalted butter, at room temperature (for filling)
  • 280g brown sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt (for filling)
  • 115g unsalted butter, at room temperature (for glaze)
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 Tbsp heavy whipping cream
  • 1/2 tsp kosher salt (for glaze)

Instructions

  1. Warm the milk in a small saucepan until lukewarm.
  2. Combine warmed milk, 50g granulated sugar, and active dried yeast in a mixing bowl and let sit until frothy (5-10 minutes).
  3. Add eggs and kosher salt to the yeast mixture, then mix in flour until a soft dough forms.
  4. Knead dough on a floured surface for 8-10 minutes, adding flour if too sticky.
  5. Incorporate butter by pressing out dough, spreading butter on top, folding, and kneading for another 5 minutes.
  6. Let the dough rise in a greased bowl, covered, for about 1 hour until doubled in size.
  7. In a skillet, melt 30g butter, add diced apples, 80g sugar, 1/2 tsp cinnamon, and corn starch; cook for 5-7 minutes until tender.
  8. Punch down the risen dough and roll it out into a large rectangle.
  9. Spread the 190g butter over the dough, then sprinkle with brown sugar and cinnamon mixture, and add apple filling.
  10. Roll the dough into a log and slice into rolls.
  11. Let rolls rise in a greased baking dish for 30-45 minutes while preheating the oven to 180°C (350°F).
  12. Bake for 25-30 minutes until golden brown.
  13. Prepare the cream cheese glaze by beating cream cheese, butter, powdered sugar, and heavy cream until smooth.
  14. Drizzle the glaze over the warm rolls and serve.

Notes

For a dairy-free option, use almond milk or oat milk. Coconut sugar can substitute for granulated or brown sugar. Enjoy with coffee or tea.
