Description

A flavorful and healthy lunch option featuring tender chicken and vibrant veggies wrapped in a soft tortilla.

Ingredients

Scale
  • 2 cups cooked chicken (shredded or cubed)
  • 1 cup black beans (rinsed and drained)
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper (diced)
  • 1 avocado (sliced)
  • 1 cup lettuce (shredded)
  • 1/2 cup plain Greek yogurt
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 4 large tortillas (whole wheat or regular)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, mix cooked chicken with 1 tablespoon of lime juice, chili powder, salt, and pepper until well-coated. Combine Greek yogurt with remaining lime juice and a pinch of salt for dressing.
  2. Lay out tortillas and place a generous scoop of seasoned chicken towards the center of each. Add black beans, corn, diced bell pepper, sliced avocado, and shredded lettuce.
  3. Carefully fold the sides of the tortilla over the filling and then roll from the bottom up, tucking everything tightly. Cut in half if desired.

Notes

Wraps can be prepared ahead and stored separately. Avoid overfilling to ensure wraps roll easily. Customize with additional veggies or swap chicken for shrimp or tofu.
