Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup cinnamon sugar (for topping)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredient mixture into the dry ingredients and gently stir, being careful not to overmix.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form, then flip and cook until golden brown.
- Remove from skillet and sprinkle with cinnamon sugar immediately.
- Serve warm, piled high on a plate.
Notes
Don’t overmix the batter for fluffier pancakes. Adjust the heat to avoid burning. Consider topping with maple syrup and fresh berries.
