- 1 tbsp lime juice

Instructions
- Peel and dice the potatoes into bite-sized cubes.
- Heat the vegetable oil in a large skillet over medium heat. Add the potatoes and cook for about 15 minutes, stirring occasionally, until golden and crispy.
- Mix salt, smoked paprika, chili powder, cumin, and cayenne pepper. Sprinkle over the potatoes, stir to coat, then add garlic and cook for 1-2 minutes until fragrant. Drizzle with lime juice and garnish with cilantro before serving.
Notes
