Description

A cozy and flavorful oven-baked dish that brings the flavors of sushi to the dinner table, perfect for family gatherings.


Ingredients

  • Sushi rice – 2 cups (uncooked)
  • Water – 2½ cups
  • Rice vinegar – ¼ cup
  • Sugar – 2 tablespoons
  • Salt – 1 teaspoon
  • Fresh salmon fillet, skinless and diced – 1 lb
  • Mayonnaise – ½ cup
  • Sriracha – 2 tablespoons (adjust to taste)
  • Sesame oil – 1 teaspoon
  • Green onions, chopped – ½ cup (plus extra for garnish)
  • Nori sheets, cut into strips – 1 sheet
  • Tobiko – optional, for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook with water according to package instructions until tender and slightly sticky.
  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fluff the cooked rice gently, then fold in the seasoning mixture evenly. Spread the seasoned rice into a lightly greased baking dish.
  3. In a separate bowl, combine diced salmon, mayonnaise, Sriracha, sesame oil, and green onions. Mix until creamy and well blended. Spread the salmon mixture evenly over the rice.
  4. Bake at 375°F (190°C) for about 15–20 minutes, until the salmon is cooked through and the top is lightly golden. Broil briefly at the end for extra color and texture.

Notes

Adjust Sriracha gradually to control the heat level. Let the bake rest for a few minutes before serving for easier scooping.
