Description

These fun and festive Halloween cookies feature cute spooky faces, perfect for celebrations and gatherings.

Ingredients

Scale
  • 125g unsalted butter, softened
  • 75g caster sugar
  • 1 large free-range egg yolk
  • 1/2 tsp vanilla bean paste
  • 200g plain flour
  • 60g strawberry jam
  • 40g dark chocolate, melted

Instructions

  1. Preheat the oven to 180C/160C Fan/Gas 4 and line a large baking tray with baking paper.
  2. In a bowl, put the softened butter and caster sugar. Beat them together until the mixture is pale and fluffy.
  3. Add the egg yolk and vanilla bean paste to the bowl. Beat again until mixed well.
  4. Gradually add the plain flour and continue to beat until it forms a soft dough.
  5. Divide the dough into 30g balls and flatten each one slightly.
  6. Use your index fingers to make two holes in each dough ball for the eyes.
  7. Place the biscuits on the baking tray, leaving space between them.
  8. Beat the strawberry jam to loosen it, then fill each eye hole with jam.
  9. Bake the cookies for about 12 minutes until they are golden around the edges.
  10. Let them cool completely on a wire rack.
  11. Transfer the melted dark chocolate into a piping bag. Cut a small hole at the end and pipe a line for the mouth beneath the jammy eyes. Add small vertical lines across the mouth to create a spooky effect.

Notes

Ensure butter is softened properly for easier mixing. Personalize the spooky faces with other decorations like edible eyes or sprinkles.
