Ingredients
Scale
- 125g unsalted butter, softened
- 75g caster sugar
- 1 large free-range egg yolk
- 1/2 tsp vanilla bean paste
- 200g plain flour
- 60g strawberry jam
- 40g dark chocolate, melted
Instructions
- Preheat the oven to 180C/160C Fan/Gas 4 and line a large baking tray with baking paper.
- In a bowl, put the softened butter and caster sugar. Beat them together until the mixture is pale and fluffy.
- Add the egg yolk and vanilla bean paste to the bowl. Beat again until mixed well.
- Gradually add the plain flour and continue to beat until it forms a soft dough.
- Divide the dough into 30g balls and flatten each one slightly.
- Use your index fingers to make two holes in each dough ball for the eyes.
- Place the biscuits on the baking tray, leaving space between them.
- Beat the strawberry jam to loosen it, then fill each eye hole with jam.
- Bake the cookies for about 12 minutes until they are golden around the edges.
- Let them cool completely on a wire rack.
- Transfer the melted dark chocolate into a piping bag. Cut a small hole at the end and pipe a line for the mouth beneath the jammy eyes. Add small vertical lines across the mouth to create a spooky effect.
Notes
Ensure butter is softened properly for easier mixing. Personalize the spooky faces with other decorations like edible eyes or sprinkles.
