Ingredients

  • 2 large eggs
  • 1 tsp vanilla extract

  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 4 tbsp milk (or non-dairy milk)
  • 1 tsp vanilla extract (for frosting)
  • Colorful sprinkles
  • Mini chocolate chips
  • Marshmallows
  • Rainbow candy
  • Gold chocolate coins
  • Gummy bears

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Cream together softened butter and sugar until light and fluffy.
  3. Add eggs, one at a time, mixing well after each addition, then add vanilla extract.
  4. Sift together flour and baking powder, add to butter mixture alternating with milk.
  5. Add green food coloring until desired shade is reached.
  6. Distribute batter into liners filling two-thirds full, and bake for 18-20 minutes.
  7. Cool cupcakes in the tin for a few minutes, then transfer to a wire rack to cool completely.
  8. For frosting, beat softened butter, add powdered sugar gradually, then milk and vanilla, mixing until fluffy.
  9. If desired, add green food coloring to frosting for a vibrant color.
  10. Frost each cupcake and decorate with sprinkles, chocolate chips, marshmallows, rainbow candy, gold chocolate coins, and gummy bears.
