Ingredients

  • 1 cup broccoli florets (fresh or frozen)
  • 1 bell pepper, sliced
  • 1/4 cup soy sauce (reduced-sodium)
  • 2 tablespoons honey (or maple syrup)
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 2 tablespoons sesame oil (or olive oil)
  • Green onions for garnish

Instructions

  1. In a large skillet, heat sesame oil over medium heat and add diced chicken. Cook for 5-7 minutes until golden and cooked through.
  2. Add minced garlic and ginger, cooking for an additional minute until fragrant.
  3. Add sliced bell pepper and broccoli florets, cooking until tender (about 3-4 minutes).
  4. Mix soy sauce and honey in a small bowl, then pour over chicken and veggies. Stir to coat evenly.
  5. Serve by spooning the chicken and veggies over rice, garnishing with chopped green onions.
