- 2 cups cooked rice (white, brown, or cauliflower rice)
- 1 pound diced chicken breast (or thighs)
- 1 cup broccoli florets (fresh or frozen)
- 1 bell pepper, sliced
- 1/4 cup soy sauce (reduced-sodium)
- 2 tablespoons honey (or maple syrup)
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 2 tablespoons sesame oil (or olive oil)
- Green onions for garnish
Instructions
- In a large skillet, heat sesame oil over medium heat and add diced chicken. Cook for 5-7 minutes until golden and cooked through.
- Add minced garlic and ginger, cooking for an additional minute until fragrant.
- Add sliced bell pepper and broccoli florets, cooking until tender (about 3-4 minutes).
- Mix soy sauce and honey in a small bowl, then pour over chicken and veggies. Stir to coat evenly.
- Serve by spooning the chicken and veggies over rice, garnishing with chopped green onions.
