A quick and comforting dish of chicken and egg noodles coated in a sticky garlic sauce, perfect for busy nights.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 8 ounces of egg noodles (or substitute with your favorite noodle type)
  • 4 cloves of garlic, minced
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 1/4 cup honey (or maple syrup for a vegan version)
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and cook the egg noodles according to package instructions for 5-7 minutes. Drain and reserve a splash of pasta water.
  2. Season chicken breasts with salt and pepper. Heat a skillet over medium-high heat, add sesame oil, and cook chicken for 6-7 minutes on each side until golden and cooked through.
  3. In the same skillet, lower the heat and sauté garlic for 30 seconds. In a bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch, then pour into the skillet. Stir for 2-3 minutes until thickened.
  4. Slice the chicken and return it to the skillet. Add the drained noodles and mix everything together, adding reserved pasta water if needed for consistency.
  5. Serve hot, garnished with sliced green onions.

Notes

Use high-quality soy sauce or tamari for better flavor. Add crushed red pepper flakes for a kick.
