  • For the Topping:
  • 1 cup granulated sugar (for rolling)

Instructions

  1. Prepare the Cream Cheese Filling: In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Drop rounded teaspoons onto a parchment-lined tray and freeze for 30 to 60 minutes.
  2. Cream Butter and Sugars: In a large mixing bowl, beat the softened butter with the brown and granulated sugars until light and fluffy, about three minutes.
  3. Add Wet Ingredients: Mix in the egg, vanilla extract, strawberry extract, and optional food coloring until fully combined and smooth.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this mixture to the wet mixture on low speed until just combined.
  5. Stuff Your Cookies: Flatten about two tablespoons of cookie dough in your palm, place a frozen cheesecake dollop in the center, fold, seal, and roll in sugar.
  6. Bake: Preheat oven to 350°F (175°C). Bake cookies spaced two inches apart for 10 to 12 minutes until edges are set but centers are soft. Cool on baking sheet.
