- ½ cup unsalted butter (melted)
- 1 cup all-purpose flour
- ¾ cup old-fashioned oats
- ½ cup granulated sugar
- ¼ cup light brown sugar (packed)
- ½ teaspoon salt (or to taste)
- 2 cups coarsely chopped fresh strawberries
- ⅓ cup granulated sugar for the strawberry layer
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and spray with cooking spray.
- In a large bowl, melt the butter in the microwave. Add flour, oats, both sugars, and salt; mix until crumbly.
- Set aside 1 heaping cup of the mixture for the crumble topping and press the rest into the prepared pan.
- In a medium bowl, mix chopped strawberries, ⅓ cup sugar, lemon juice, and cornstarch.
- Pour strawberry mixture over the crust, spreading evenly.
- Sprinkle the reserved crumble mixture on top of the strawberries.
- Bake for 30-35 minutes until golden brown and bubbling; cool in the pan for 15 minutes before lifting out to cool completely on a wire rack.
Notes
For a dairy-free option, use coconut oil or plant-based butter. For gluten-free, swap to gluten-free oats and flour.
