Ingredients

  • ½ cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • ¾ cup old-fashioned oats
  • ½ cup granulated sugar
  • ¼ cup light brown sugar (packed)
  • ½ teaspoon salt (or to taste)
  • 2 cups coarsely chopped fresh strawberries
  • ⅓ cup granulated sugar for the strawberry layer
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and spray with cooking spray.
  2. In a large bowl, melt the butter in the microwave. Add flour, oats, both sugars, and salt; mix until crumbly.
  3. Set aside 1 heaping cup of the mixture for the crumble topping and press the rest into the prepared pan.
  4. In a medium bowl, mix chopped strawberries, ⅓ cup sugar, lemon juice, and cornstarch.
  5. Pour strawberry mixture over the crust, spreading evenly.
  6. Sprinkle the reserved crumble mixture on top of the strawberries.
  7. Bake for 30-35 minutes until golden brown and bubbling; cool in the pan for 15 minutes before lifting out to cool completely on a wire rack.

Notes

For a dairy-free option, use coconut oil or plant-based butter. For gluten-free, swap to gluten-free oats and flour.
