A simple, summery delight with a buttery crust and juicy strawberries, perfect for sharing with family.


Ingredients

  • 1 ¾ cups (250g) all-purpose flour
  • ⅓ cup (65g) granulated sugar
  • 3 tablespoons (45g) packed light brown sugar
  • ¾ cup (170g) salted butter, melted
  • 1 teaspoon (5ml) pure vanilla extract
  • 3 cups (400g) chopped fresh strawberries
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (9g) all-purpose flour
  • ½ cup (60g) powdered sugar
  • 1 tablespoon (15ml) light or heavy whipping cream
  • ¼ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, combine flour, granulated sugar, brown sugar, and salt. Mix in melted butter and vanilla extract until crumbly.
  3. Press two-thirds of the crumb mixture into the bottom of the pan. Bake for 15-20 minutes until golden and cool slightly.
  4. In another bowl, toss strawberries with granulated sugar and flour. Spoon over the crust and crumble remaining crumbs on top.
  5. Bake for 30-35 minutes until juices are bubbling and topping is golden. Cool completely in the pan.
  6. Whisk powdered sugar, cream, and vanilla in a bowl until smooth and drizzle over the cooled bars. Cut into 12 bars.

Notes

Use fresh berries for best results. Get kids involved in layering the strawberries for added fun!
