Ingredients

  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the almond flour, melted butter, and erythritol. Stir until well blended and press mixture into the bottom of a greased 9×9 inch baking pan.
  2. Beat together the softened cream cheese, sour cream, vanilla extract, and eggs until smooth and creamy. Pour this mixture over the crust and evenly distribute.
  3. Bake for 30-35 minutes, or until the edges are slightly golden and the center is set. Let cool at room temperature and then chill in the fridge for at least 2 hours.
