- 2 cups almond flour
- 1/2 cup butter, melted
- 1/4 cup erythritol (or sweetener of choice)
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs

Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the almond flour, melted butter, and erythritol. Stir until well blended and press mixture into the bottom of a greased 9×9 inch baking pan.
- Beat together the softened cream cheese, sour cream, vanilla extract, and eggs until smooth and creamy. Pour this mixture over the crust and evenly distribute.
- Bake for 30-35 minutes, or until the edges are slightly golden and the center is set. Let cool at room temperature and then chill in the fridge for at least 2 hours.
