Ingredients
2 cups cooked chicken, shredded
4 cups chicken broth
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 cup corn, frozen or canned
1 onion, chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Tortilla strips for serving
Lime wedges for garnish
Chopped cilantro for garnish
Instructions
1. In a large pot, sauté onions and garlic over medium heat until softened, about 3-4 minutes.
2. Add chicken broth, shredded chicken, black beans, diced tomatoes, corn, cumin, chili powder, salt, and pepper. Mix well.
3. Bring to a boil, then reduce heat and simmer for 20 minutes.
4. Serve hot, topped with tortilla strips, lime wedges, and cilantro.
