- 4 pieces Chicken Breasts (boneless, skinless)
- 3 tablespoons Honey (for marinade)
- 2 tablespoons Lime Juice (freshly squeezed)
- 1 tablespoon Lime Zest
- 2 cloves Garlic (minced)
- 1 teaspoon Ground Cumin
- Salt and Pepper to taste
- 1 cup Jasmine Rice (or basmati)
- 2 cups Chicken Broth
- 2 pieces Avocado (diced)
- 1 small Red Onion (finely chopped)
- 1/4 cup Fresh Cilantro (chopped)
- 1 tablespoon Olive Oil
- 4 pieces Lime Wedges (for garnish)
Instructions
- In a mixing bowl, whisk together the honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Marinate the chicken in this mixture for at least 30 minutes.
- Rinse the jasmine rice under cold water. In a medium saucepan, combine the rinsed rice and chicken broth, bring to a boil, then reduce heat and simmer for about 15 minutes.
- Heat olive oil in a skillet over medium-high heat. Sear the marinated chicken for 5-7 minutes on each side until golden brown and cooked through. Let rest before slicing.
Notes
For a spicy kick, add a pinch of chili powder. Customize toppings according to your taste.
