  • 2 cloves Garlic (minced)

  • Salt and Pepper to taste
  • 1 cup Jasmine Rice (or basmati)
  • 2 cups Chicken Broth
  • 2 pieces Avocado (diced)
  • 1 small Red Onion (finely chopped)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges (for garnish)

Instructions

  1. In a mixing bowl, whisk together the honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Marinate the chicken in this mixture for at least 30 minutes.
  2. Rinse the jasmine rice under cold water. In a medium saucepan, combine the rinsed rice and chicken broth, bring to a boil, then reduce heat and simmer for about 15 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Sear the marinated chicken for 5-7 minutes on each side until golden brown and cooked through. Let rest before slicing.

Notes
