- 2 lbs boneless, skinless chicken breasts (about 3–4 medium)
- 4 cups chicken broth or water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, smashed
- 1 bay leaf (optional)
- For the Sliders & Sauce:
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons finely chopped fresh chives
- 1 tablespoon finely chopped fresh dill
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 12 slider buns (Hawaiian rolls or brioche)
- 4 tablespoons unsalted butter, melted
- 1/4 teaspoon dried parsley
- Toppings: butter lettuce, sliced red onion, microgreens
Instructions
- Cook the Chicken: In a large pot, combine chicken breasts, broth (or water), salt, black pepper, garlic, and bay leaf. Bring to a boil, then reduce heat and simmer covered for 15-20 minutes until chicken is fully cooked. Shred with forks and set aside.
- Prepare Sauce: In a bowl, mix mayonnaise, Greek yogurt, honey, Dijon mustard, lemon juice, chives, dill, garlic powder, and salt/pepper until smooth. Add shredded chicken and toss to coat.
- Assemble Sliders: Lightly brush cut sides of slider buns with melted butter. Place on a baking sheet and bake at 350°F (175°C) for 5-7 minutes until toasted. Fill each bun with chicken mixture and desired toppings (lettuce, red onion, microgreens).
- Final Touch: Sprinkle dried parsley over the top of each slider for garnish before serving.
