- 2 chicken thighs (bone-in, skin-on)
- 1 cup of baby potatoes, halved
- 2 cups of fresh spinach
- 1 small red onion, sliced
- 3 cloves of garlic, minced
- ½ cup of chicken broth (or vegetable broth for a vegan version)
- 1 tablespoon of olive oil
- Salt and pepper to taste
- A sprinkle of Italian herbs (basil, oregano, or thyme)
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken thighs with salt, pepper, and Italian herbs, and place them skin-side down to sear for 5-7 minutes until golden brown.
- Flip the thighs and add sliced red onion and minced garlic, stirring gently.
- Nestle halved baby potatoes around the chicken, pour in the chicken broth, cover, and simmer for 20 minutes.
- Remove the lid, stir in fresh spinach, and cook for an additional 5 minutes until wilted and chicken is fully cooked.
Notes
Ensure chicken is at room temperature before cooking for better searing. Allow flavors to meld by tasting and adjusting seasonings during cooking.
