Instructions

  1. In a large bowl, mix the flour, granulated sugar, baking powder, and salt.
  2. In another bowl, whisk together the eggs, milk, and vanilla extract until light and frothy.
  3. Combine the wet and dry ingredients, mixing until just mixed.
  4. Heat oil in a deep pot or fryer to 350°F (175°C).
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  6. Remove from oil and let drain on paper towels. Dust with powdered sugar and serve warm.

Notes
