- 50g caster sugar
- 1 pack active dry yeast (approx. 7g)
- 480g plain flour (plus extra for dusting)
- Pink food gel (for coloring, optional)
- 100g fresh or frozen raspberries
- 50g caster sugar (for filling)
- 1 tablespoon water
- 2 tablespoons cornflour
- 130g strawberry or raspberry jam
- 50g chopped fresh strawberries
- 60g dairy-free butter (for filling)
- 40g dairy-free cream cheese
- 150g icing sugar
- 1 teaspoon vanilla extract
- Dairy-free milk (for adjustment as needed)
- 2 tablespoons freeze-dried strawberries or raspberries (for topping)
- Fresh strawberries (for decoration)
Instructions
- Mix the Yeast and Milk: Combine the dairy-free milk with the active dry yeast in a large mixing bowl. Let it sit for 5-10 minutes until frothy.
- Combine Wet Ingredients: Add melted dairy-free butter and caster sugar to the yeast mixture and stir until combined.
- Add Flour: Gradually add plain flour, mixing until a shaggy dough forms.
- Knead the Dough: Turn out the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
- Let It Rise: Place the dough in a greased bowl, cover with a damp towel, and let it rise for 1-2 hours, or until doubled in size.
- Make Raspberry Sauce: In a saucepan, combine raspberries, 50g sugar, water, and cornflour. Heat until thickened; set aside to cool.
- Mix Cream Cheese Mixture: Combine dairy-free cream cheese, melted dairy-free butter, icing sugar, and vanilla extract until light and fluffy.
- Roll Out the Dough: Punch down risen dough, roll it out into a rectangle about 1 cm thick.
- Spread the Cream Cheese Mixture: Evenly spread the cream cheese mixture over the dough.
- Add Filling: Drizzle raspberry sauce over the cream cheese, sprinkle with chopped strawberries.
- Roll and Slice: Roll the dough into a log and slice into 12 rolls, placing in a greased baking dish.
- Second Rise: Cover with a towel, let rise for 30 minutes.
- Bake: Preheat the oven to 180°C (350°F) and bake for 25-30 minutes until golden brown.
- Cool and Top: Allow to cool, then decorate with freeze-dried berries and a glaze of icing sugar mixed with dairy-free milk.
