Ingredients

  • 4 cups beef broth
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add the beef stew meat and sear on all sides until browned, about 5-7 minutes.
  3. Add the chopped onion and garlic; cook until softened, about 3-5 minutes.
  4. Stir in the carrots, potatoes, thyme, and Worcestershire sauce, mixing well.
  5. Pour in the beef broth and add the bay leaf.
  6. Bring to a boil, then reduce to a simmer and cover.
  7. Cook for 90-120 minutes, until the beef is tender and flavors meld.
  8. Season with salt and pepper to taste before serving.
