- 2 pounds beef stew meat, cut into 1-inch cubes
- 4 cups beef broth
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon Worcestershire sauce
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add the beef stew meat and sear on all sides until browned, about 5-7 minutes.
- Add the chopped onion and garlic; cook until softened, about 3-5 minutes.
- Stir in the carrots, potatoes, thyme, and Worcestershire sauce, mixing well.
- Pour in the beef broth and add the bay leaf.
- Bring to a boil, then reduce to a simmer and cover.
- Cook for 90-120 minutes, until the beef is tender and flavors meld.
- Season with salt and pepper to taste before serving.
