  • For the Streusel Topping:
  • ½ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ cup unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin pan with liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, mix the egg, milk, melted butter, and vanilla.
  4. Combine the wet and dry ingredients, stirring until just moistened.
  5. Fold in the chopped apples.
  6. For the streusel, mix flour, brown sugar, and cinnamon, then cut in the cold butter until it resembles coarse crumbs.
  7. Divide the muffin batter into the muffin cups and sprinkle with streusel topping.
  8. Bake for 18-22 minutes until a skewer inserts cleanly.
  9. Cool slightly before transferring to a wire rack.

Notes

Use your favorite apple variety for best results. You can substitute butter with applesauce for a lighter option.
