- 1 large egg
- ½ cup milk
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup chopped apples (about 1 medium apple)
- For the Streusel Topping:
- ½ cup all-purpose flour
- ¼ cup packed light brown sugar
- ¼ teaspoon ground cinnamon
- ¼ cup unsalted butter, cold and cut into small pieces
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin pan with liners.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, mix the egg, milk, melted butter, and vanilla.
- Combine the wet and dry ingredients, stirring until just moistened.
- Fold in the chopped apples.
- For the streusel, mix flour, brown sugar, and cinnamon, then cut in the cold butter until it resembles coarse crumbs.
- Divide the muffin batter into the muffin cups and sprinkle with streusel topping.
- Bake for 18-22 minutes until a skewer inserts cleanly.
- Cool slightly before transferring to a wire rack.
Notes
Use your favorite apple variety for best results. You can substitute butter with applesauce for a lighter option.
