Ingredients

  • 3 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tsp dried thyme or Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and pat the chicken breasts dry.
  2. In a small bowl, combine olive oil, salt, black pepper, garlic powder, and paprika, then rub all over the chicken.
  3. If desired, sear the chicken in a hot skillet over medium-high heat for 2-3 minutes on each side.
  4. In a separate bowl, whisk together heavy cream, grated Parmesan, Dijon mustard, lemon juice, and dried thyme until smooth.
  5. Place the seasoned chicken in a greased baking dish, pour the creamy sauce over it, cover with foil, and bake for 20-25 minutes.
  6. Remove foil in the last 5 minutes for browning, then let the chicken rest for 5 minutes before serving.

Notes

Feel free to substitute chicken thighs for extra flavor, and use cream alternatives for a lighter version.
