- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 cup chicken broth (or vegetable broth)
- 8 oz cream cheese, softened
- 1 tablespoon fresh chives, chopped
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: 1/2 cup shredded sharp cheddar cheese for topping
- Optional: Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Season the chicken breasts with salt, pepper, and paprika, then sear in olive oil over medium heat for about 2-3 minutes per side.
- In the same skillet, sauté minced garlic for 30 seconds, add chicken broth, simmer for 1-2 minutes, then stir in cream cheese until smooth. Add chives and season with salt and pepper.
- Place seared chicken in the prepared baking dish and pour the cream cheese sauce over it. Optionally, sprinkle shredded cheddar cheese on top.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C). Broil for an additional 2-3 minutes for a bubbly topping.
- Garnish with fresh parsley before serving.
Notes
Use vegetable broth for a lighter option. You can substitute cream cheese with dairy-free alternatives to make it suitable for those with dietary restrictions.
