- 2 cups Mixed Vegetables (bell peppers, broccoli, or snap peas)
- 2 cups Rice (or quinoa/brown rice)
- 1/2 cup Mayonnaise
- 1/4 cup Sweet Chili Sauce
- 2 tablespoons Sriracha
Instructions
- Cook the rice by bringing 4 cups of water to a boil, adding rice (or quinoa), reducing heat to low, covering, and simmering until tender (18-20 minutes for white rice, 40-45 minutes for brown rice).
- In a skillet, heat olive oil over medium-high heat, add chicken, cooking for about 6-7 minutes per side until golden (internal temperature should be 165°F for breasts, slightly longer for thighs).
- Sauté mixed vegetables in the same skillet for about 5 minutes until tender. Slice the cooked chicken.
- Assemble the bowl with a layer of rice, topped with sautéed vegetables and chicken strips. Drizzle with a mixture of mayonnaise, sweet chili sauce, and Sriracha.
